Gazpacho Andalusia

Ingredients : (for 4 people)
  • Tomatoes 700 gr.
  • Sandwich bread 80 gr.
  • 1 cucumber
  • 1 green pepper
  • Olive oil 40ml.
  • Sherry vinegar 20 ml.
  • Water 150ml.
  • 1 clove of garlic
  • Salt

Difficulty : Easy

  • Total time 25 mins.
  • Elaboration 25 min.
  1. Rinse the tomatoes and remove the tail.
  2. Cut into small pieces and place them in a blender.
  3. Add the clove of garlic, the cucumber (3/4), the green pepper, the bread, the oil and the vinegar.
  4. Blend until you get a smooth texture. Add salt and let cool in the fridge.
  5. For the filling, finely cut pieces of Iberian ham, 1/4 tomato and 1/4 cucumber into small squares.

Recommendations: Basil or coriander leaves can add a special touch.
