Traditional fideuá

Ingredients for 4 persons :

  • Thick noodles 400 g
  • Monkfish 200g
  • 2 Cuttlefish
  • 16 prawns
  • 2 cloves garlic
  • 4 Ripe pear tomatoes4
  • sweet paprika
  • saffron threads
  • Olive oil
  • Fish broth 1 l

Preparation: Cut the fish into small pieces. Heat a little extra virgin olive oil in a paella pan or frying pan and sauté the food in it. Remove and set aside. Then sauté the seafood. Remove and set aside.

In the same oil, fry the finely chopped garlic, and when it begins to brown, add the peeled and grated tomato, the paprika, the saffron threads, the noodles and the hot broth. Season to taste with salt and pepper and cook over medium heat for seven or eight minutes.

At this point, add the reserved monkfish and cook for a few more minutes. Add the shelled shellfish, cover and let stand for another two minutes while the shrimp cook with the residual heat. If the fideuá becomes dry during cooking, add small amounts of fish stock, still hot.
