Bacalao Croquettes

Ingredients : (for 4 people)
  • Desalted cod 350 gr.
  • Milk 750ml.
  • Olive oil 75ml.
  • Flour 80 gr.
  • Nutmeg
  • Chive
  • breadcrumbs
  • 2 eggs
  • Olive oil
  • salt

  • Elaboration 10 min.
  • Cooking 40 mins.
  1. Cut the cod into small pieces.
  2. Pour 75 cl. of olive oil in a saucepan.
  3. Add the cod and heat.
  4. Add the flour as soon as it begins to boil.
  5. Pour the milk little by little without stopping stirring for 15-20 minutes.
  6. Add the nutmeg and chives.
  7. Leave to cool in a dish.
  8. Roll into balls using a tablespoon.
  9. Flour, dip in egg and then with breadcrumbs.
  10. Fry in a pan with plenty of olive oil.
